Pancakes, bacon & maple syrup

I suspect that this recipe evolved in Canada.  Whatever, somebody deserves a posthumous Nobel Prize for this glorious contribution to the world – the perfect breakfast!


600 mL buttermilk
2 eggs
1 teaspoon of pure vanilla
2 cups of self-raising flour
half teaspoon of bi-carbonate soda
third cup of sugar
30 grams melted pure butter
200 grams of ricotta cheese


blend first 6 ingredients into a smooth consistency
add the melted butter and blend in thoroughly
slowly blend in crumbled ricotta cheese until  just combined (a few lumps are OK)
let stand while pan heats
rub hot pan with piece of butter
pour mixture to centre of pan, letting it spread out from centre
when bubbles are well developed and surface no longer sloppy – turn over – should be crispy and slightly burnt on cooked face
when cake swells, steaming, wait a few seconds, then remove

Serve with crispy fried bacon and generous drizzle of maple syrup, and steaming cup of strong, brewed black coffee
