Perfect Poached Egg Recipe

The Perfect Poached Egg

This method is probably well known in chef circles.  We were made aware of it through a TV episode featuring Heston Blumenthal.


Eggs (the fresher the better)
Heated water (keep at 80oC or 176oF)


Heat water in a large pan
place a dinner plate in the bottom of the pan to keep eggs from the hot bottom surface
control the water temperature to 80oC (176oF)
crack eggs and discard shells
add the eggs to the heated water
simmer for 4 minutes
Remove eggs and serve

DO NOT boil the water
DO NOT add vinegar to the water
both of these actions will result in tough, rubbery egg whites
