Splendid Asian Duck Recipe
This originated as a duck recipe, but can be applied to game birds in general. Its origins are of Asian heritage. It is a great recipe for ducks and other game birds.
Ingredients
One duck or other game bird (per 1kg, 2 pounds)
100 grams (3 ounces) green ginger
1 whole knob of garlic (full bunch of cloves)
1.5 cups water
½ cup of honey
½ cup of soy sauce
Method
Roughly scrape outer skin off ginger
Lightly pound ginger then cut into small cubes
Separate and skin garlic cloves
Place bird, ginger, garlic and water in large saucepan
Bring to boil, then add soy sauce and return to boil
Reduce heat and simmer covered saucepan for two hours (turn bird after 1 hour)
Remove duck from saucepan
Strain and keep saucepan liquid, discard the ginger and garlic
Return strained liquid and bird to the pan and return to boil
Add honey, reduce heat, simmer uncovered for 30 minutes (baste bird frequently)
Remove bird from pan and allow to cool
Cut bird into large pieces, then re-assemble into full shape
Bring sauce back to boil, then pour over the bird
Serve with rice and steamed vegetables
