BBQ Marinated Game Fillets
This is another family favorite. The back-strap fillets from small deer, goats and kangaroos are ideal for this. If you are lacking game meat then lamb fillets from your local butcher are a great substitute.
Game (or lamb) fillets (per 1kg – 2.2 pound)
¼ cup sherry
¼ cup soy sauce
¼ cup honey (optional as this will char on the BBQ)
1 tablespoon each of bottled ginger
2 or 3 crushed cloves of garlic
1 teaspoon bottled chillies
2 teaspoon seeded mustard
Sprig of fresh rosemary (or dried)
1 tablespoon oil
Freshly ground pepper
Mix marinade ingredients together and pour over lamb.
Marinate for 3 hours (not in fridge) or overnight (in fridge).
Turn marinade dish occasionally.
Briefly sear meat on very hot plate
Remove seared meat to low heat plate and add marinade
Stir meat and marinade as the liquid boils and thickens
Serve with fresh tossed salad of your choice and a good red wine (Shiraz for me)
