Pepper Steak Recipe

This is traditionally a beef recipe, but game meat like roo or venison is well-suited to it as well.


The Marinade
700 grams of kangaroo(or venison) fillet steak
100 grams of butter
1 tablespoon of extra virgin olive oil
½ cup of chopped parsley
3 cloves of garlic (crushed)
1 tablespoon of green peppercorns (crushed)
1 tablespoon of French mustard
1 tablespoon of extra virgin olive oil
1 teaspoon of lemon (or lime) juice
Salt & pepper to your taste

The Marinade

The Sauce
¾ cup of water
¼ cup of cream
1 tablespoon of tomato paste
1 tablespoon green peppercorns
1 small cube of beef stock

The Sauce


Rinse peppercorns

Mix together all marinade ingredients and blend well

Rub steak with a little oil, then sear quickly (about 10 seconds per side) in very hot pan

Place seared steak into an alfoil lined baking dish

Rub meat with the marinade, then fold alfoil to make a compact, sealed package

Bake in moderate oven for fifteen minutes at 150oC (300oF) for medium-rare

While meat is cooking, blend the sauce together

Remove meat from oven, placing steaks into serving dish

Pour the oven juices into the sauce mixture then stir over high heat for a minute of two

Pour the sauce over the steak and serve.
