Almond Bread Recipe

Almond bread is a delightful, light treat.  It goes nicely with a cup of coffee.  I particularly like a couple of slices with a very strong espresso coffee.  You can make this using pistachios instead of almonds, if you prefer.

Ingredients

3 egg whites
½ cup of caster sugar
¾ cup of whole non-blanched almonds
1 cup plain flour
vanilla or almond essence

Method

Beat egg whites until stiff.

Gradually blend in the sugar.

Continue beating until a good meringue consistency is achieved.

Fold in the flour and almonds.

Place mixture in a lightly greased loaf tin.

Bake for 30 to 40 minutes in a moderate oven.

Let the loaf cool completely, then remove from tin and wrap tightly in aluminum foil

Leave for 1 or 2 days.

Using a very sharp knife cut the loaf into wafer-thin slices.

Place slices on oven tray and bake at 135oC (275oF) until dry and lightly browned.
